I, like many people, love food..... not just food but good food. I also like to eat a nutritious diet, so i find many recipes that keep my diet interesting. For those of you on the Paleo diet during this challenge, what recipes have you found that keep you going???

Cinnamon Apple Paleo Muffins

1 c almond flour
1 c unsweetened finely shredded coconut
2 eggs
1 large apple, cored, peeled, and diced (or 1 cup of another fruit such as blueberries, strawberries, banannas)
2 Tbsp olive oil
2 tsp almond butter
1/4 c blue agave sweetener
1/2 tsp cinnamon
1/2 tsp salt
a dash of nutmeg
Mix all ingredients and divide evenly into a muffin tin. Bake 15 minutes at 375F. Makes 1 dozen.

This is the muffin recipe I modify to make mine but I am going to try the original recipe soon. I will post the turkey quish recipe when I get home. Miss you guys.
For me, LaraBars have helped smooth the transition. Cutting out all processed foods cold turkey wasn't as hard as I thought it would be, thanks in part to these treats. Perfect dessert. As far as recipes... I am just starting to get creative now. I really like the Paleo Meatballs Chris brought to my Paleo superbowl party. They are easy to snack on too. Portable protein. Here is the recipe:
250g mince (aka about 1/2 lbs extra lean beef)
1tsp salt
1 /3 cup almond meal
3 cups baby spinach
1tsp dijon mustard (optional)
25g tomato paste
2tbs sage
Instructions
Pre-heat fan-forced oven to 180 degrees Celsius (aka 360 farhenheit).
Place spinach in a bowl and cover with boiling water, leave for 2 minutes before draining as much liquid as possible from the spinach. Chop well. Place spinach in a bowl along with mince, salt, almond meal, mustard, tomato paste and sage. Combine well.
Roll into 2.5cm (aka 1 inch)size balls and place on an oven proof baking tray lined with baking paper.
Bake in the oven for 10-15 minutes, or until browned and cooked through.
NOTE: Do not cook longer than recommended. It looks like they need it at first, but follow directions and then let them sit afterwords. Cooking longer will dry them out.
Lastly... simple recipe and yummy.
2 hardboiled eggs
1 tbsn sliced green onions
pepper to taste
1 tbsn trader joe's canola oil mayonnaise
2 romaine lettuce leaves
Dice the eggs and combine with all other ingredients except romaine. Use lettuce leaves for a crunchy wrap. I know mayo isn't technically Paleo. I guess you could make your own. I settled for this organic Canola version from Traders.
